Fried Rice

Ingredients:
• 3 ½ teaspoons sesame oil
• 4 teaspoons soybean oil
• 5 tablespoons low-sodium soy sauce divided
• 4 tablespoons butter divided
• 2 teaspoons fresh lemon juice
• ½ cup diced white onion
• 1 cup frozen mixed vegetables peas, carrots
• 2 large eggs
• 4 cups cooked rice
• Salt and pepper to taste

Directions:
1. Heat sesame oil and neutral oil in skillet.
2. Heat neutral oil, sauté onion and vegetables.
3. Push veggies aside, scramble eggs.
4. Add cooked rice and butter, cook.
5. Stir in soy sauce.
6. Add salt, and pepper to taste.
7. Cook until warmed through.
8. Portion into bowls, garnish with sesame seeds if desired, and serve warm.
