Buffalo Tempeh Lettuce Wraps

1 tbsp olive oil (or soybean oil)
1 (8 oz) package tempeh
2 tbsp buffalo sauce + more for drizzle
6 large lettuce leaves, bibb works well*
½ cup shredded carrots
1 green onion, sliced
2 tbsp ranch

Optional Toppings:

Blue cheese crumbles

*Note: Want to make these more filling? Try it in a whole-grain wrap

Buffalo Tempeh Lettuce Wraps

1. Heat oil in a skillet. Add tempeh and sear each side until golden brown.
2. Turn off the heat and baste each side of the tempeh with buffalo sauce.
3. Assemble the lettuce wraps, filling each with shredded carrots, tempeh, green onion, a drizzle of ranch dressing, and buffalo sauce if you want more heat.
4. Enjoy!
