Buttermilk Ranch Dressing and Dip

Yield: 1¾ cups
Serving Size: 2 tablespoons

1 cup plain soymilk
1 tablespoon white vinegar
½ cup soft silken tofu
½ cup plain Greek yogurt
1 packet Ranch dressing mix (3 tablespoons)

1. In a small mixing bowl, combine soymilk and vinegar.
2. Allow to rest for 15 minutes. (This will make soy buttermilk).
3. In a food processor, add soymilk/vinegar mixture.
4. Add remaining ingredients; purée until smooth.
5. Refrigerate for at least 30 minutes. Serve with vegetables or over salad.
6. Store in air-tight container in refrigerator for up to 1 week.
