Creamy Italian Dressing

1 cup plain soymilk

1 package (12 ounces) firm tofu

2 packages (0.7 ounce each) dry Italian dressing mix

Mix all ingredients in blender or food processor until smooth and creamy. Refrigerate.

Yield: 10 servings. Per 2 tablespoons serving: 40 calories, 1 g fat (0 g sat fat), 3 g protein (3 g soy protein), 5.5 g carbohydrate, 554 mg sodium, 0 mg cholesterol, 0 g dietary fiber.
