Simple Pumpkin Muffins
Ingredients:
• 1⅔ cups all-purpose flour
• ⅔ cup dark brown sugar
• 2 tsp baking powder
• 1½ tsp cinnamon
• 1 tsp baking soda
• ½ tsp ground cloves
• ½ tsp ground nutmeg
• ¼ tsp salt
• 1 egg
• ½ cup vanilla soy milk
• ¼ cup vegetable oil
• 1 cup pure pumpkin (not pumpkin pie filling)
• Optional: 1 tbsp pepitas (pumpkin seeds) for topping

Directions:
1. Preheat Oven: Preheat the oven to 400°F (200°C) and grease a 12-cup muffin tin with cooking spray.
2. Mix Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, baking soda, cloves, nutmeg, and salt.
3. Mix Wet Ingredients: In another bowl, beat the egg. Then add the soy milk, vegetable oil, and pumpkin, mixing until combined.
4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
5. Fill Muffin Cups: Distribute the batter evenly into the muffin cups. Sprinkle pepitas on top if using.
6. Bake: Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool: Let the muffins cool in the pan for a few minutes before removing them to a wire rack.
