Soy and Vegetable Stew
Ingredients
• 1 cup soybeans (cooked or canned)
• 1 can diced tomatoes (14.5 oz)
• 1 medium potato, peeled and diced
• 2 carrots, sliced
• 1 cup green beans, chopped
• 1 onion, diced
• 2 cloves garlic, minced
• 4 cups vegetable broth
• 1 tbsp soy sauce
• 1 tsp dried thyme
• Salt and pepper to taste
Instructions
1. In a large pot, heat a little oil and sauté the diced onion and minced garlic until soft and fragrant (about 3 minutes).
2. Add the carrots, potatoes, and green beans to the pot, stirring for another 3-4 minutes.
3. Add the cooked soybeans, diced tomatoes, vegetable broth, soy sauce, and thyme. Stir well.
4. Bring to a boil, then reduce heat and let simmer for 25-30 minutes, or until the vegetables are tender.
5. Season with salt and pepper to taste, and serve warm.
