Soy-Based Pumpkin Protein Balls
Ingredients
• 1 cup almond flour
• ⅓ cup vanilla soy-based protein powder
• ¼ cup mini chocolate chips
• 1 teaspoon pumpkin pie spice
• ½ teaspoon cinnamon
• ½ cup pumpkin puree
• 2 tablespoons maple syrup
• 2 tablespoons soy milk
• 1 teaspoon vanilla extract
• 1 tablespoon soy nut butter
• Pinch of sea salt

Directions
1. Prepare Baking Sheet: Line a baking sheet with parchment paper for easy cleanup.
2. Mix Dry Ingredients: In a large bowl, combine almond flour, protein powder, chocolate chips, pumpkin pie spice, cinnamon, and sea salt (if using).
3. Add Wet Ingredients: Add the pumpkin puree, maple syrup, soy milk, nut butter, and vanilla extract to the dry ingredients. Mix well until the mixture forms a dough-like consistency.
4. Shape the Dough: Using your hands or a small cookie scoop, shape about 2 tablespoons of dough into a ball and place each ball on the prepared baking sheet. You should get about 14 balls.
5. Scoop Out Dough: Use a spatula to scrape down the sides of the bowl to ensure you use all the dough.
6. Chill (Optional): For firmer balls, you can refrigerate them for about 30 minutes before serving.
