Soy Chili
Instructions
1. In a large pot, sauté the diced onion and garlic until softened.
2. Add the chili powder, cumin, paprika, and oregano. Stir to coat the onions and garlic with the spices.
Ingredients
• 1 cup cooked soybeans (or use edamame)
• 1 can kidney beans, drained and rinsed
• 1 can black beans, drained and rinsed
• 1 can diced tomatoes (14.5 oz)
• 1 onion, diced
• 2 cloves garlic, minced
• 2 tbsp chili powder
• 1 tsp cumin
• 1/2 tsp paprika
• 1/2 tsp oregano
• 3 cups vegetable broth
• Salt and pepper to taste
• Optional toppings: sour cream, shredded cheese, cilantro
3. Add the cooked soybeans, kidney beans, black beans, diced tomatoes, and vegetable broth to the pot.
4. Bring to a boil, then reduce heat and let simmer for 30-40 minutes, stirring occasionally.
5. Season with salt and pepper. Serve with optional toppings like sour cream, shredded cheese, or cilantro
