Soy Pancakes

Ingredients:

• 1.5 cups all-purpose flour
• 1 tablespoon baking powder
• 0.5 teaspoons salt
• 2 tablespoons granulated sugar
• 1 cup soy milk
• 0.5 cups water
• 2 tablespoons soy oil
• 1 tablespoon soy butter (for greasing)
• 2 tablespoons maple syrup (to serve)
• 0.5 cups fresh fruit (to serve)

Steps:
1. Add flour, baking powder, salt, and sugar to a large bowl and whisk until evenly blended.
2. Add soy milk, water, and soy oil directly into the dry mix. Fold everything together gently.
3. Set a griddle or wide pan over medium-high heat and let it get properly hot. Melt soy butter across the pan.
4. Scoop roughly 1/3 cup of batter per pancake onto the griddle. Keep an eye on the surface; once bubbles start breaking through and the edges look dry, it's time to flip. Give the other side about 1 minute to 1 minute and 30 seconds until deep golden.
5. Layer the pancakes up, drizzle with maple syrup, and scatter fresh fruit over the top.
