Soy Waffle Sandwhich

3 oz. super-firm tofu (1 serving)
1 large egg + 2 egg whites, beaten
1 tablespoon creamy peanut butter
¼ cup prepared kimchi
2 homestyle freezer waffles
Hot sauce and cilantro, if desired
Cooking spray

1. Toast waffles according to package directions.
2. Heat a small nonstick pan over high heat. Spray with cooking spray. Place tofu in the pan and cook each side for two minutes. When golden brown, add egg mixture. Scramble eggs around tofu until cooked through. Alternatively, place the pan under a broiler to set eggs.
3. Assemble your sandwich. Spread peanut butter on one waffle and top with tofu/egg mixture, then kimchi (hot sauce and cilantro if desired). Top with remaining waffle. Slice in half if desired and enjoy immediately.
