Soy Yogurt Pumpkin Parfait
Ingredients
• 1/2 cup pumpkin puree (exact amount depends on the size of your parfait glass)
• 1/2 cup soy yogurt (plain or vanilla-flavored)
• 2 tablespoons pecans, chopped (or granola)
• 1/2 teaspoon cinnamon
• 1/8 teaspoon ground cloves
• 1 teaspoon honey (optional, to taste)
Directions:
1. Prepare the Pumpkin Mixture: In a bowl, mix the pumpkin puree with the cinnamon, ground cloves, and half of the honey. Adjust the sweetness to your preference.
2. Layer the Parfait: Fill your parfait glass a little under a fourth of the way with the pumpkin mixture (about half of the pumpkin puree).
3. Add Pecans or Granola: If using pecans, toast them and sprinkle a thin layer over the pumpkin puree. Alternatively, you can use granola.
4. Prepare the Soy Yogurt: In a separate bowl, mix the soy yogurt with the remaining honey, adjusting to taste.
5. Continue Layering: Cover the pecans or granola with a layer of the soy yogurt, then add another thin layer of pecans or granola, followed by the remaining pumpkin puree.
6. Finish with Yogurt: Add a dollop of soy yogurt on top, and garnish with additional pecans or granola.
7. Serve: Enjoy your delicious soy yogurt pumpkin parfait!
