Spinach Artichoke Dip
Ingredients
1- 16 oz. package of silken tofu, crumbled
1- 16 oz. package of low-fat cream cheese
1 cup low-fat mayonnaise
1⁄2 teaspoon ground black pepper
1- 16 oz. package of frozen chopped spinach
1- 16 oz. package of marinated artichoke hearts
1⁄2 cup green onions, chopped
1 tablespoon grated soy cheese, for garnish (optional)
Instructions
- Thaw and drain chopped spinach and artichoke hearts
- Crumble tofu and beat until smooth
- Mix in cubed cream cheese, mayonnaise and pepper in mixer bowl
- Fold in chopped spinach, artichoke hearts and green onions
- Pour mixture into baking dish
- Top with soy cheese, if desired
- Bake at 350°F for 15 to 20 minutes or until brown
