Spinach Artichoke Dip


1- 16 oz. package of silken tofu, crumbled

1- 16 oz. package of low-fat cream cheese

1 cup low-fat mayonnaise

1⁄2 teaspoon ground black pepper

1- 16 oz. package of frozen chopped spinach

1- 16 oz. package of marinated artichoke hearts

1⁄2 cup green onions, chopped

1 tablespoon grated soy cheese, for garnish (optional)


  • Thaw and drain chopped spinach and artichoke hearts
  • Crumble tofu and beat until smooth
  • Mix in cubed cream cheese, mayonnaise and pepper in mixer bowl
  • Fold in chopped spinach, artichoke hearts and green onions
  • Pour mixture into baking dish
  • Top with soy cheese, if desired
  • Bake at 350°F for 15 to 20 minutes or until brown
