Super Soy Cookies with P. Allen Smith

Super Soy Cookies

Wet Ingredients:
1¼ cups light brown sugar
½ cup vegetable shortening (hydrogenated soybean oil)
¾ cup soy nut butter
3 tablespoon soy milk
1 tablespoon vanilla extract
1 large egg

Dry Ingredients:
1½ cups all-purpose flour
¼ cup soy flour
¾ tsp. baking soda
¾ tsp. salt
roasted soy nuts

Preheat oven to 375° F.

Mix together the light brown sugar, oil, soy nut butter, soy milk, vanilla extract using a mixer. Once completely mixed together, add the egg and stir.

In a separate bowl, mix the all-purpose flour, soy flour, baking soda and salt together. You will then gradually mix the dry ingredients with the wet ingredients.

Spoon out about a teaspoon size ball onto a cookie sheet. Take some of the soy nuts and push them deep into the wet dough. The reason you need to bury the soy nut deep into the dough is because during the cooking process they will get pushed out and will burn.

Bake for about 8 to 10 minutes or until golden brown. These are yummy!
