Vegan Irish Sodabread
Ingredients:
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup unsweetened soy milk
1 tbsp apple cider vinegar
1/4 cup vegan butter, melted
1/2 cup raisins (optional)
Instructions:
Preheat the oven to 400°F.
In a large mixing bowl, whisk together the flour, baking soda, and salt.
In a separate bowl, combine the soy milk and apple cider vinegar. Stir and let sit for 5 minutes to curdle.
Add the melted vegan butter to the soy milk mixture and stir to combine.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the raisins, if using.
Transfer the dough to a floured surface and knead gently for a few seconds until it comes together.
Shape the dough into a round loaf and transfer it to a baking sheet lined with parchment paper.
Use a sharp knife to make an "X" on the top of the loaf.
Bake for 30-40 minutes, until the bread is golden brown and a toothpick inserted into the center comes out clean.
Let the bread cool for a few minutes before slicing and serving.
